The operational management of quality control and quality assurance, ISO 22000 and HACCP.
Participation in internal audits, external audits and customer visits as and when required.
Monitoring and investigating product complaints and returns.
Ensuring adherence to contractual, regulatory and internal specifications and requirements.
Liaising with plant management and Plant Base Cold Storage Management on any non-conforming issues.
Ensuring adherence to Total Integrated Management System.
Staff management and development.
Reporting on compliance with company and regulatory standards, both Plant and Plant Based Cold Storage.
Conducting internal audits – both Plant and Plant Based Cold Storage.
Assistance during plant trials.
Assistance with any other projects approved by Management.
Participating in Product KPI audits as and when required at the plant and at Customer premises.
Action any initiatives as directed by QA Management.
Accurately prepare, analyse samples, calculate and record data according to set work instructions.
Ensure good housekeeping standards in the QC monitoring stations / Lab.

Dip Food Tech, Bio Tech, Environmental Health, etc.
3 – 5 years supervisory working experience as a QA officer/Technologist preferable
Poultry Meat Examiners/Inspectors Certificate.
Able to work shifts if required

NPD Tech - Poultry & Meat


NPD Technician who has exp developing products related to the meat industry - ingredients, batch packs, spice packs, brines etc. req for well-known ingredient supplier in Johannesburg. This well-rounded candidate will play a pivotal role and would require a person who meets the requirements depicted in the ad. Product development:
Initiate and drive all meat and poultry ingredient development projects – research and development of ingredient solutions specifically related to the meat and poultry industry (single ingredients, batch packs, spice packs, brines, etc.).
Formulate products to comply with ALL relevant regulations (national and international) e.g. DOH, DAFF, CPA, CODES, etc.
Be able to validate results based on performance and regulatory compliance.
Formulate products to conform to both performance and cost parameters.
Explain and motivate development rational.
Be accountable to reach deadlines – offering, performance, price, cost in use.
Develop a standard solution range that outperformance current available products and develop customer specific solutions.
Meeting & liaising with sales team / customer over product briefs and development of new products according to customer specification / brief – new, match, improvement of products for customers.
Liaise with current supplier network and tap into their knowledge base to develop new offering.
Search and identify other suppliers that can add value to Lake Foods offering and development projects.
Practical application:
Manage and oversee meat laboratory and test kitchen. Keep the facility in line with company requirements and internal department health, safety and hygiene requirements.
Stock meat lab with ingredients and managed expiry and quality control.
Build up sample library with appropriate products.
Request samples and manage as per quality procedures – develop in house protocols if required.
Carry out all practical trials in house, keep accurate records and be able to verify result trial – both handwritten and database.
Carry out pilot plant trails with supplier and customer inputs.
Host customer visits and collaborative sessions.
Scale up pilot trials and oversee actual production trials at processing plants. Record, analyze and assess results in order to adjust formulations if required.
Overseeing up-scale of recipe from development phase to factory trials & manufacturing.
Develop and review production processes – both for new products, and to change production parameters at customer plants.
Source new materials & packaging where applicable and make sure this is carried through to specifications and production
Create baseline framework from Bill of Material to be signed off.
Work closely with production departments to ensure that development product is successfully commercialized.
Sensory analysis for customers & internal evaluation, shelf life testing and evaluation final product performance as to the original brief.

Third party contact:
Liaise on a regular basis with customers, suppliers, industry standards, regulatory and statutory bodies.
Communicate effectively and clearly with Technical, Quality, Sales, and production departments.
Travel as and when required for customer contact and production trials.
Be able to troubleshoot and identify process changes to ensure successful rollout of a new product.
Stay abreast of local and global developments and innovations.
Know the competitor environment and constantly advance competitive advantage.

Systems and procedure:
Institute quality and document control procedures for products developed.
Comply with Document and Quality procedures in line with ISO and FSSC requirements
Implement efficient document control to ensure that only valid documents are utilized across the whole organization.
Responsible for ensuring that all products comply with legislation, including labelling regulations. Be abreast of new legislation and pending rollouts.
Completion of customer questionnaires and internal safety data sheets as well as product data sheets.
Documents control of new product development process.
Assisting with & monitoring of quality control, factory hygiene & adherence to health & safety procedures.
Ensure compliance with all legislative regulations.
Development of internal & external specifications of products.
Completion of raw material information questionnaires.
Assisting with procedures & documentation for the Food Safety Management System.
Assisting with & monitoring of quality control, factory hygiene & adherence to health & safety procedures.

Tertiary qualification in Food Science / Food Technology.
Minimum of 3 years’ experience in food industry, in the meat / poultry / spice / savory ingredient fields.
Knowledge of food safety systems – e.g. ISO, FSSC, laboratory practices, food regulations, meat and poultry industry.
Knowledge of micro-organisms, microbiological tests & results.
Knowledge of chemical analysis such as Brix, pH, acidity & viscosity.
Formulation, calculation and basic chemical abilities.
Preferably system experience (e.g. Syspro).
Computer literate - Excel, Word, etc.
Read, write and speak English fluently.
